  • 36 g Icing sugar
  • 112 g Butter
  • 27 g Milk

  • 200 g Fresh blueberries
  • 100 g Granulated sugar
  • 30 g Unsalted butter
  • 1 Cinnamon stick
  • 100 g Sponge crumble

Instructions:

1. Prepare the Pie Crust

  • In a large bowl, mix flour and icing sugar.
  • Add cold butter, rubbing it into the mixture until it resembles breadcrumbs.
  • Gradually add milk, kneading lightly to form a smooth dough.
  • Wrap the dough in cling film and refrigerate for 30 minutes.

2. Make the Blueberry Filling

  • In a saucepan, combine blueberries and sugar.
  • Add the cinnamon stick, simmering until the blueberries release their juices.
  • Stir in butter for a glossy finish, then remove the cinnamon stick and cool.

3. Assemble the Pie

  • Roll out the chilled dough and line a greased pie dish. Trim off excess dough.
  • Spread sponge crumble over the base.

  • Preheat the oven to 180°C (350°F).
