Eid Special: Rich and Creamy Sheer Khurma Recipe 

It’s almost Eid and without sheer khurma eid is incomplete so here we are sharing with you the authentic eid special sheer khurma recipe a classic Eid dessert. Sheer Khurma is a rich vermicelli pudding made with milk, lots of nuts, dates and sugar!

The dish literally means milk with dates. Its often made during Eid in the Indian subcontinent, Afghanistan and also parts of central Asia. 

Ingredients:

1 litre full-fat milk

½ cup condensed milk (optional, for extra richness)

½ cup fresh cream (optional)

½ cup sugar (adjust to taste)

1 cup fine vermicelli (seviyan), broken into small pieces

2 tbsp ghee (clarified butter)

10-12 almonds, sliced

10-12 cashews, chopped

8-10 pistachios, sliced

10-12 dates (khajoor), chopped

2 tbsp chironji (charoli seeds)

2 tbsp raisins (kishmish)

Flavour and garnishing:

½ tsp cardamom powder

1 tsp rose water or kewra water

5-6 saffron strands (optional, for aroma & color)

1 tbsp desiccated coconut (optional)

Method:

First soak dates in warm water for 15-20 minutes to soften them. This enhances their sweetness and texture. Meanwhile heat 2 tbsp ghee in a heavy-bottomed pan. And add chopped almonds, cashews, pistachios, chironji, and raisins fry for 1-2 minutes until they turn golden brown. Remove and set aside.

In the same pan, add vermicelli (seviyan) and roast until golden brown keep stirring to prevent burning. In a separate pot, bring 1 litre of milk to a boil. Stir occasionally to prevent burning lower the flame and let the milk simmer for 5-7 minutes, allowing it to reduce slightly add sugar, cardamom powder, and saffron strands. Stir well.

Add the roasted vermicelli to the simmering milk. Stir continuously and cook for 5-7 minutes until it softens also add the fried nuts, softened dates, and fresh cream (if using). Mix well.

Pour in condensed milk for extra richness. Adjust sweetness if needed. For the final touch add rose water or kewra water and give it a final stir.

Let the sheer khurma simmer for another 2-3 minutes to absorb all flavors.

Serve warm or chilled, garnished with extra nuts and saffron strands.
