One Bowl Healthy Vegan Banana Bread Recipe 

Vegan Banana Bread is a healthy and lightly sweetened dense bread which is a perfect option to make when you have overripe bananas left. This bread is easy to make and uses ingredients that are always available in the kitchen.

This banana bread makes a great breakfast or snack. It’s a small bundt cake that can be cooked in your Instant Pot without having to heat up your kitchen, especially during the summer months

Flax seeds have a rich, earthy, and slightly nutty flavor, making them a fantastic addition to baked goods like bread, muffins, and cookies. When flax seeds are ground and mixed with water, the natural gum in their coating turns gelatinous, creating a thick, gel-like consistency. This unique property makes them an excellent egg substitute in vegan baking, helping to bind ingredients together and add moisture to recipes.

Ingredients

1 tablespoon flaxseed meal

3 tablespoons water

2 ripe bananas

1/3 cup oil

1/2 cup sugar

1 teaspoon vanilla extract

1/8 teaspoon salt

1 teaspoon baking soda

1½ cups all-purpose flour

Method 

You can use store-bought flaxseed meal or grind flax seeds in a coffee grinder. Mash the bananas and make the batter by mixing in all the ingredients. Then  pour it in the grease bundt pan. Cover the pan with a paper towel and aluminum foil and pressure cook for 50 minutes. Release the remaining pressure after 10 minutes and open the Instant Pot. Allow the banana bread to cool for 5 minutes before flipping it onto a plate.
